Premix 300 g: Water: 180 ml (2/3rd cup): Oil: 15 ml (1 TBSP), Yeast 9-10 g

PROCEDURE FOR BREAD

• Prepare an 8-inch bread mould (Bar cake mould) lightly with oil. Make one round dough ball. Flatten with fingers to make square shape approx. 8 to 9 inch. From two parallel sides, fold this sheet inwards to form a small square in a book fold. Now start rolling tightly from one unfolded end to another to make a cylindrical shape.
• Pinch the ends together to seal and put in the bread mould keeping the seal part downwards. Press it gently so that dough reaches all the corners evenly. Spray some water on the surface of the dough. Meanwhile, heat the oven to 220°C. Cover the mould with wet muslin or wet cotton cloth and keep it at room temperature for around 30 minutes or until it becomes double the size. (Tip: To avoid the dough from drying out from sides or cloth touching the dough surface, put some weight or glasses on either side of the wet cloth).
• Brush/spray milk on the surface before baking. Bake it for 30-35 minutes in the preheated oven at 220°C. Remove it from the oven and apply some oil to the bread surface. Leave it for 2 minutes and then remove it from the mould. Cool for at least 45 minutes before slicing.
