Rice Vialone Nano is considered by everybody as the originator of the finest risotto rice types of Italian production, it clearly distinguishes itself from the other rice types for its very large grain, and due to its length, it is classified among the middle-sized and not short rice types, despite its rounded shape. Being very versatile, it is suitable for a wide range of dishes: from very creamy risottos to tasty soups and thick soups. It is Italian rice which expands in cooking to produce plump, creamy risotto rice. Rich in amylose, the starch which allows rice grains to remain fluffy and separate once cooked, Vialone Nano rice holds its shape well during cooking whilst absorbing the flavours of the risotto stock. Vialone Nano grains are short and plump, with the ability to take more robust flavours with flair. With a slightly lower starch content than Carnaroli Rice, Vialone Nano Rice is appreciated for its lightness and less grainy texture, as well as the ability to absorb large volumes of liquid while still holding its shape. "Nano" varieties, it is one of the most prestigious Italian rice. Its excellent baking behaviour and its organoleptic qualities make it the best international chefs' favourite rice. Popular in the Veneto and Mantova regions, Vialone Nano makes a deliciously smooth and creamy risotto. The round grains retain a firm texture while remaining soft, making it perfect to combine with rich ingredients like champagne, truffles or saffron. The preferred rice of the Veneto region, Vialone Nano can absorb twice its weight in liquid. With a starch content almost as high as Carnaroli’s, it also produces a very creamy risotto. Risotto, at its core, is rice cooked in broth. Achieving the luscious creamy texture of a good risotto is dependent on using the right kind of rice. It is the quickest cooking of the three varieties. Best used for recipes that call for a rich, wholesome and filling risotto. (Cook between 15 and 17 minutes for a nice result.)
