Cauliflower is made up of tightly bound clusters of soft, crumbly, sweet cauliflower florets that form a dense head.   • Brinjals: Bottle brinjals are a nutritionally rich food item. They are rich in dietary fibres, Vitamin C and K, phytonutrient compounds and anti-oxidants. They help in keeping cholesterol levels in check and helps in weight loss while being excellent for controlling blood sugar levels and are also known for preventing cancer and heart diseases.


  • Cauliflower: One serving of cauliflower contains 77 per cent of the daily recommended value of vitamin C. Cauliflowers are rich in B complex vitamins, potassium and manganese. They protect from the risk of heart diseases and brain disorders. It also contains a cancer-fighting nutrient called sulforaphane.


  • Cabbage: Cabbage improves brain health and vision. Best for people who want to lose weight in a healthy way. It detoxifies the body and contains glutamine that reduces the effects of inflammation, allergies, joint pain, irritation, fever. Cabbages also help prevent cancer.
Storage and Uses
  • Brinjals: Brinjals are not good for a long time storing. So, consume within a few days and store in a cool spot, away from direct sunlight. If not consumed within 2 days, refrigerate by wrapping in a paper towel or perforated plastic bag and use within a week. The inner white flesh turns brown quickly once its cut, so use it as soon as you cut them or refrigerate by placing the remaining on a bowl or plate, but avoid sealing, as it increases decay. Brinjals are a prominent part of Indian dry and gravy curries. Also used in lentil soups, stews and rice items. Can be roasted, grilled, baked and stir-fried.   • Cauliflower: Refrigerate in a loosely sealed plastic bag. It keeps well for up to 7 days. Do not store florets for more than 5 days. Cooked and used in soups, rice, curries, gobi parathas(flatbreads), one of the most liked recipes.


  • Cabbage: Do not cut cabbages unless you are immediately consuming as it begins to lose vitamin C when cut. If you absolutely cannot immediately finish the remaining cabbage, wrap it tightly in plastic wrap and store it in the refrigerator for up to two days. Keeping them in the refrigerator retains the crispiness of the vegetable. Shredded cabbage can be directly added to any salad and sandwiches as they are most nutritious when eaten raw. Also used in pickles and flatbreads. Stew fried cabbage, onion, garlic, bell pepper and green chillies mixed with steamed rice, and soya/chilli/tomato sauce is a popular favourite (Chowmein) in China and other South-East Asian regions.
