The Bilona Technique

From the Ancient India

The bilona method is centuries old. The method is elaborate and effective which requires great effort and time. After the milk is fermented to curd, the curd is shifted to a wooden pot in which the wooden bilona with the rope is wrapped around it. Then, the curd is churned clockwise to produce butter, later, the butter is melted over firewood to produce “The Golden Ghee”. This method results in what we call the “Real” Desi Cow Ghee, it adds in the nutrition, extra taste, and stronger aroma. Bilona Method is the superior most form of making pure and Healthy A2 Ghee

Differences between A1 & A2 Cow Ghee

  1. A2 milk comes from Indian desi cows such as - Badri, Tharparkar, Sahiwal, Red Belahi,etc whereas A1 milk comes from western breeds,which are mixed/hybrid like Jersey, Holstein.
  2. A2 milk has A2 beta -casein protein which improves bone strength, brain power and helps in easy digestion whereas A1 milk has A1 beta - casein protein which according to studies it causes harmful effects to our health.
  3. A2 milk is easily digestible, hence, doesn’t cause lactose intolerance whereas Consuming A1 milk might be a cause of lactose intolerance and digestive distress.

Badri Desi Cow

The Badri is a dual - purpose ‘desi’ cattle breed - reared for milking and draught purposes. The petite Badri cow is found only in the hill districts and was earlier known as the ‘Pahadi’ cow. This cow grazes in the high Himalayas on native herbs and shrubs and hence its milk has high medicinal value. The milk of the Badri cow contains almost 90% A2 Beta-casein proteins - and is one of the highest in any indigenous varieties.

Tharparkar Desi Cow

They are mostly found in the Thar desert in Rajasthan, hence the name - Tharparkar. This cow is one of the top milking cows in India. It is also called, White Sindhi, Thari, or Cutchi Cattle of this breed are strongly built, medium sized, with straight limbs and good feet. The usual colour of the cattle is white or gray.

Sahiwal Desi Cow

Sahiwal is considered to be one of the cattle breeds of India. The breed derives its name from Sahiwal area in Montgomery district of Punjab in Pakistan. It is light brown, red and dark brown. It produces 10 to 12 liters of milk per day. The Sahiwal cattle are considered as one of the top dairy breeds in India and Pakistan mainly due to the high milk production as well as its resistance to tick borne diseases. They are best known for high quality mik and high protein legumes.
