Khapli Wheat, also known as Emmer was one of the 1st grains to be cultivated, and was the primary wheat grown in Asia, Africa and Europe throughout the first 5,000 years of recorded agriculture, more than 17,000 years ago. However over the centuries, Emmer was gradually abandoned in favor of more productive, hybrid varieties of Durum Wheat. The proteins available in ancient wheat varieties, of which Emmer is an important part, are higher in content and easier to absorb and assimilate in the gut. When kneading the dough made with Emmer flour, it feels so soft and makes fluffy chappathis which are light on the stomach.

Our Quality Analysis team did a comparison study for Gluten and fibre content and the results are as follows.
